Sometimes It's Not Ultra Fabulous... (But OK Is Not Bad!)

Happier Chana Times...
So I've been a bit obsessed with Chickpeas...

... So was I also obsessed with this recipe for Chana Masala.

I've made it several times...

... and it is the most gorgeous thing ever.  

I lament when it is all done.

I made it tonight...

... and made some changes.

We usually make half the recipe...

... tonight we made the full.

While I love me some chickpeas...

... I decided I would try some spinach love.

Because we made the full recipe...

... I wound up using my pot rather than pan like I normally would.

It all wound up spelling...

... not disaster.

Just not my ultra fabulous rock-your-effing-socks-off Chana Masala.

Every bite was fabulous...

... just not ultra fabulous.


I promise I will not alter you again, Chana Masala.

The Good, The (Not-So) Bad, And The... Well...

As usual, I was lulled by the siren's call of Mac & Cheese.  I was very prepped to do one recipe, but got sidetracked by another...

and Fake-Out Mac

Reviews of the meal I was going to make for The FiL while he was visiting, which The Husband and I spent a large amount of time making tonight so that the food would not go bad.

The great thing about this plate of food was the Chipotle Barbecued Tofu as presented by Fat Free Vegan Kitchen.  Man-oh-man!  The sauce was totally off the hook!  The Husband likened it to KC Masterpiece, only "kicked up a couple of notches."  It was sweet, smokey and flavorful.  OK... confession.  I did add a couple of drops of Liquid Smoke.  Maybe it didn't really need that, but I certainly cannot help myself sometimes.  No matter what, we'll be making that sauce again and again in the future.

The Husband also liked the tofu!  We think the difference may be the new vice press that is TofuXpress, which really gets the liquid out and makes the tofu all nice and firm and nummy.  Great investment, if it gets The Husband liking tofu more and I don't have to use so many paper towels and stoneware to get a quarter of the result...

I also made the Whole Foods recipe for Brussels Sprouts with Apples and Shallots.  It was good, though not oh-my-god-this-is-freaking-amazing-chipotle-barbeque-sauce good.  The apples and sprouts balanced out to a nice mellow flavor.  I can't lie though.  When I ate this, I added a bit more salt and pepper.  The husband found the recipe ultra confusing.  I had to read it a few times to realize he's right.  I guess though I'm scatter-brained enough to get it... 

The disappointment was the Fake-Out Mac 'n Cheese from Happy Healthy Life.  The pictures were amazing, and oh!  That siren's call.  And yet...  not bad.  It just wasn't my thing.  The Husband didn't mind it and finished off what I left (which was most of it, I don't believe in bites that are disappointing).  He did point out that perhaps I didn't like it because I was never a fan of blue box Mac and Cheese. 

And he's right.  I was all about the Deluxe.  The original recipe I was going to make.  Well, there will be revenge of Mac & "Cheese" this weekend!  I will make the recipe I was originally.  I have even higher hopes for it now (and based on other stuff I've made from this particular book, I'm sure they will be met).

Seriously though.  If you don't learn anything from this post, learn this... make that Chipotle Barbecue sauce. Smother it on everything.  Even your pumpkin.

Pumpkin Pumpin' Through My Veins!



First, I wish I'd known about this:  VeganMoFo (Vegan Month of Food)!  I could have blogged.  About food!

Now I have to be satisfied to just... er, blog about food.  

I knew right here that I would not be disappointed.  I am disappointed
that my camera acted quite wonky this session though...
In any case, October is Vegetarian Awareness Month, which kicked off with World Vegetarian Day yesterday.    So, you know.  Be aware of Vegetarians.  Heck, become one.  I think you'll enjoy the health benefits... and you can win cash.  Or you can always do the Weight Watchers/Doctor Oz Transformation Nation.  I think you'll enjoy the health benefits... and you can win cash.

As of late I've seen a lot of pumpkin recipes; oatmeals, lattes, breakfast cereal concoctions of heaven, a breakfast sandwich I am dying to try... 

... and then all I want is a muffin.

I was looking for a cool desert to make for dinner with The FiL that I could also eat the next morning because it would be made of pumpkin and that's what I do these days.  However, try as I might, I could not find the recipe... the one fun vegan pumpkin muffin that spoke to me on all levels (taste, health... pumpkin).
So I decided I'd take what I liked from several recipes and then strike out on my own.  But would it work?

The thing is, I had a fancy dinner with The FiL and The Husband all set and ready to go, except then we all went out shopping and did many things that made fancy dinner highly unlikely to have until next Thursday.  So I dipped into my new score of Quick-Fix Vegetarian for a quick-fix rescue!
The Sesame-Spinach Salad with Mango came together in a flash.  I think the tang of the tahini/tamari dressing was balanced nicely with the sweetness of the mango (thank goodness we got a good mango).  Also, there was spinach, so you know I was happy.

Then, Baked Beans and Rice.  As simple as it sounds, but it came together lightning fast (the secret was veg in the form of salsa).  I liked it, though The Husband thought it was too salsa-y.  I think really though a few shakes of Liquid Smoke may be in order the next time around.

Though it was a fast (and rather tasty, thank you!) fix, it did take an hour to cook... but that was enough time for me to work with my muffins!  There were many things I wanted from this pumpkin treat:

1)  To be made of pumpkin.

2)  To be ... somewhat healthy (certainly veg and low-fat)

3)  To have dried cranberries and chia involved.

4) To be delicious.

5) To be made of pumpkin. 

(Yes, the pumpkin was an important point.)

After looking at a bazillion recipes on the interwebs and in my books, I took what bits I liked and constructed my very own pumpkin muffin recipe.  The FiL and The Husband gave it rave reviews!  The Husband made several Mmmmm comments as he enjoyed his with a cup of pumpkin coffee (I guess we're both obsessed with that squash as of late).  


I could even tell this was something special... sweet without being too sweet, moist, incredibly dreamy and pillow-y with bursts of dried cranberries... and, of course, full of pumpkin-y goodness.

The only thing I'd do over likely is to swirl the chia seed onto the top.  I sprinkled it on, but some loose seeds fell off when removing them from the pan.  Not a lot though... and still wound up moist and tasty.  Please try if you can, I think you would not be disappointed!

So I present onto you A Brooklyn Heart's Pumpkin Cran-Chia Muffin Recipe... Influenced and inspired by several muffin recipes... I'm sure this exact recipe is floating out there somewhere...)

Pumpkin Cran-Chia Muffin
Serves 12

Ingredients

1 cup whole wheat pastry flour   
3/4 cup white all-purpose flour   
1 Tbsp baking powder   
2 tsp pumpkin pie spice (I used Penzeys, but a mix of cinnamon, nutmeg, ginger and allspice would do in a pinch)
1/4 tsp kosher salt   
1/4 cup organic cane sugar
1 cup canned pumpkin   
1/2 cup plain unsweetened almond milk
1/3 cup unsweetened applesauce   
2 Tbsp maple syrup   
2 ounces dried cranberries
1 Tbsp chia seed

Instructions

Preheat oven to 400 degrees.
Mix dry ingredients: Flours, baking powder, salt, and spices.
Mix wet ingrdients: pumpkin, almond milk, apple sauce, maple syrup.
Pour wet ingredients into dry and mix until just combined. 
Fold in the cranberries, and pour evenly into a muffin tin sprayed with cooking spray. 
Sprinkle each muffin with 1/4 tsp of chia seed and let sit for a few minutes.
Bake for 15-20 minutes and or until a toothpick inserted comes out clean. 
Enjoy!

What I Ate Wednesday: 2011-09-28

Breakfast
Beans (on Spinach) on Toast, Half Grapefruit, Tankard (half) filled with Pumpkin Spice Latte a'la Chocolate-Covered Katie.

Morning Snacks
Grape Tomatoes, Snap Peas and Carrots (guess who forgot to snap the picture straight away) and a Pear.
Lunch

Zippy Yams with Bok Choy... but combined with barley, broth and some left-over broccoli slaw I had into a soup.  Was feeling soupy that day.

Afternoon Snacks
 Banana with tea, some grapes, GG Bran Crispbread and Soy Crisps (1 serving)

Dinner
Chunky Ratatouille Sauce, over farfalle and covered in cannellini beans (got that idea from Vegan Crunk.

Dessert
Ended the day the way I began it:  Chocolate-Covered Katie and her Raw Chocolate Fudge Cake ...

It was my version, I dared to dream!
I did modify the recipe to my tastes and to what I had.  This was dreamy, so here is the recipe I used!

Chocolate Fudge Goodness

Ingredients:
80g Banana
4 Tbsp Almond Butter
4 Tbsp Unsweetened Cocoa Powder
Scant 1/16th tsp Salt
1 Tbsp Maple Syrup 

Instructions:
Blend all ingredients until smooth.
Portion out into tiny square dishes.
Top with 1 almond.
Place in the fridge overnight or freezer for a few hours.**
Serve garnished with raspberries and a The Husband grown mint leaf.
Enjoy!
(**If you freeze, take them out for 20 minutes to thaw before serving)
